Throughout their conscious lives, as the founders recount, they have been involved with coffee in one way or another—brewing it, roasting it, selecting it at plantations, participating in various championships, winning, and training others to win. They initiated coffee production in different countries and cities, continuously evolving and working in the best companies and teams, with a variety of equipment and raw materials.
In November 2018, The Wlder Catherine was born. They have something to say through their coffee, and that's why they were born.
Every day, without wasting time, they create something new or refine what's existing. They aren't on a quest for the best coffee from the best plantations worldwide. Instead, they travel across the globe and simply pick the coffee they themselves enjoy. And if they can't find it, they create such coffee with their farmer friends. They want people to just drink their coffee... or not if they don't like it. They won't stop doing it. It's just what they know, love, and what they live for.
The Wlder Catherine works directly with farmers and personally communicates with them. They even name varieties in honor of these farmers, emphasizing their significance to them!
They also have their own farm, La Violeta, in Colombia's Huila region, where processes are overseen by one of the local farmers, whom they treat like family.
They approach coffee study from a scientific perspective, conducting many experiments. Most of their coffee is produced according to their fermentation profiles (look for the "experimental" label on the package for the processing method). They experiment with their fermentations in more than 10 regions and will soon begin experimenting on the La Violeta farm.
The main goal of their farm experiments is to bring out the terroir's taste in a new way, imbued in the bean by nature. Such coffee is vibrant and intense in taste, combining many unusual descriptors and having a pleasant velvety body. Depending on the terroir where the coffee was grown, it might feature bright acidity, sweetness, a wine-like character, or notes of tropical fruits, and so on. This coffee is diverse in taste characteristics and largely depends on the region and conditions it was grown in, as well as the variety itself.
